I want to share with you some recipes I like to cook for my family! I will keep updating with even more! I always try to use organic ingredients when possible especially when cooking meats for your loved ones! Remember moderation and portion control is key when eating!!
Salmon Burgers w/ asparagus and quinoa
- Salmon burgers (from Trader Joe's) topped with fresh tomatoes and baked onion (bunless)
1) Bake onion and tomato (if desired) for 15 minutes or so on 375 until tender
2) Top Salmon burger with tomato and cooked onion
- Toss asparagus in extra virgin olive oil with salt and pepper and bake on 350 until tender (Daniel likes his wrapped and baked with prosciutto - not so healthy version)
- Cook quinoa according to directions (I buy organic from Trader Joe's)
Taco Soup
- Organic lean ground beef cooked until brown
- Organic diced tomatoes (I buy in bulk from Costco)
- Organic tomato sauce (Also in bulk from Costco)
- Organic kidney beans, black beans and corn (from Trader Joe's)
- Paprika (to taste)
- Crushed red peppers (to taste)
- Pepper (to taste)
1) Mix all ingredients together and serve hot
Steak Fajitas with Green Apple Salsa (courtesy of Food Network)
- Skirt Steak
- Small whole stone ground wheat tortillas (can substitute with corn tortillas for gluten free option)
- Mozzarella Cheese
- 1lb tomatillos
- 2 granny smith apples (organic preferred)
- 2 garlic cloves (unpeeled after baking)
- 2 jalapenos (stemmed)
- 1/2 white (sweet) onion
1) Cook steak to liking
2) Toss in olive oil and bake tomatillos, apples, garlic cloves, jalapenos and onion on 350 for 20 minutes
3) Once cooked blend ingredients in food processor until completely mixed
4) Top tortilla with steak, green apple salsa and sprinkle with mozzarella. Add tortilla to top and cook on both sides until golden - serve warm
